Un vin mineral, toasté aux notes d’agrumes et de fruits frais vieillit sur lies 12 mois
Le Domaine Naudin Ferrand possède quelques crus bien connus des aficionados de la Côte d’Or, comme Echezeaux ou Aloxe, mais ce sont dans les appellations régionales (80 % de la surface plantée) que le Domaine s’exprime. Claire Naudin est à l’image de ses vins : sincère et transparente. Le prénom est bien choisi, nous direz vous. La vigneronne n’aime ni la langue de bois, ni les autres artifices du langage viticole.
Maquiller un discours, ce n’est pas sa tasse de "tisane", encore moins quand il s’agit de faire le vin. Ce qu’elle préfère c’est observer, expérimenter sur une parcelle témoin, et aviser. La biodynamie s’expérimente, elle ne s’applique pas aveuglement. L’idée est d’accompagner la vigne depuis sa racine, l’encourager à puiser elle même ses ressources à travers un sol vivant. Toute l’année, la terre est enherbée, afin de préserver la faune et micro-faune du terroir.
